Ceramic Knives are made from Zirconium Oxide (Also called Zirconia). It is very hard, wear resistant and chemically inert.Why Use a Ceramic Knife
Light weight: Ceramic knives are a fraction of the weight of conventional steel knives making them very easy to handle.Super Sharp: When you buy your Eversharp ceramic knife it is already very sharp. Ceramic is many times harder than steel, In fact it is second only in hardness to diamond, which means that your ceramic knife will stay sharp for a very long time.
Better Food Hygiene
Ceramic is a non porous, non stick, easy clean surface. Usually all that is required to clean your ceramic knife is a rinse under the tap and a wipe off. They are dishwasher safe, but we do not recommend it, remember, they are very sharp so care is needed when reaching in to take them out, it is also possible for damage to the edge to occur if they are struck by other cutlery. Ceramic will not rust or tarnish.Caring for your Ceramic Knife
Ceramic knives are not intended for cutting very hard items like bone, wood, etc. They are also not intended for prying apart frozen foods or laying on their side to smash things like garlic. They are intended for slicing and dicing, this they do incredibly well.Always use them on a wood or plastic chopping board, avoid cutting on hard bench tops or ceramic plates.
Do not drop them on hard floor surfaces like concrete or tiles it is possible to break or chip the blade.
Ceramic Knives can only be sharpened with a diamond sharpener. If you are proficient in sharpening knives and you already have a diamond sharpener you can then sharpen them yourself. Otherwise take them to a sharpening service. You will have to do this very infrequently; some people go a year or more without sharpening their ceramic knife.
After considerable use you will possibly see very small Micro chips or abrasions on the Knife edge. This is quite normal with ceramic knives, if it is still cutting well, continue to use it until it needs sharpening
Ceramic knives are best stored in a knife block or layed flat where they are not knocked about by other utensils.
